A trio of desserts consisting of a 16 components. It started with a Gateaux Opera made up of layers of passion fruit butter cream, chocolate and lilikoi ganache. Following was a red wine poached pear with a velvetty custard and a panna cotta topped with cardemom roasted apricot and seasme tuile.
